In die vroeë 1980's het sy besluit om haar op rolprentwerk toe te spits en toneelspel studeer. Haar eerste noemenswaardige rol was in ''The Postman Always Rings Twice'' (1981). In 1985 het haar pa haar die rol van Maerose, die dogter van ’n Mafiabaas, gegee in ''Prizzi's Honor'', ook met [[Jack Nicholson]]. Huston het die Oscar vir beste vroulike byspeler gewen en die eerste persoon geword wat ’n Oscar wen nadat ’n ouer én grootouer dit ook reggekry het.
Huston is vir [[Bafta]]s benoem vir haar spel in [[Woody Allen]] se prente ''Crimes and Misdemeanors'' (1989) en ''Manhattan Murder Mystery'' (1993). Sy was ook Morticia Addams in die gewilde ''[[Addams Family|The Addams Family]]'' (1991) en ''Addams Family Values'' (1993), waarvoor sy twee [[Golden Globe]]-benoemings gekry het, en die Grand High Witch in die kinderprent ''The Witches'' (1990). Sy het dikwels saam met die regisseur [[Wes Anderson]] gewerk, onder meer in ''The Royal Tenenbaums'' (2001) en ''The Life Aquatic with Steve Zissou'' (2004).
